• 2 tbsp vegetable oil
• 2 cloves of garlic, minced
• 1 medium onion, diced
• 3 cups of bison, cubed
• 1 large tomato, chopped
• 1 can (14.5 oz) diced tomatoes
• 1 bell pepper, diced
• 1-2 jalapenos, diced
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp ground turmeric
• 1/2 tsp smoked paprika
• 1 bay leaf
• 2 cups vegetable broth
• 1/2 cup coconut milk
• Salt & pepper, to taste


1. In a large skillet, heat the oil over medium-high heat.
2. Add the garlic and onion and sauté for 3 minutes, stirring occasionally.
3. Add the bison cubes and brown them for about 7 minutes.
4. Add the chopped fresh tomato, canned tomatoes, bell pepper, jalapeno, cumin, coriander, turmeric, smoked paprika, and bay leaf to the skillet.
5. Sauté the ingredients together for 3 minutes, stirring frequently.
6. Add the vegetable broth and reduce the heat to low. Simmer for 15 minutes.
7. Once the bison is cooked through, add the coconut milk and season with salt and pepper to taste. Stir to combine.
8. Simmer for an additional 5 minutes.
