Stuffed Italian Meatloaf – Our Grandmother’s Recipe
Tantalize your tastebuds with this family-favorite Italian meatloaf! My grandmother has passed down this amazing recipe for generations. Everyone in the family goes wild for it. The moist and flavorful interior is stuffed with a blend of mozzarella, Parmesan, and ricotta cheese. The outside is deliciously seasoned with herbs and paprika, giving it a well-rounded flavor.
Ingredients:
- 1 large egg
- 1/3 cup Italian-style dried bread crumbs
- 1/4 cup chopped onion
- 1/3 cup chopped celery
- 1/3 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 pound lean ground beef
- 1/4 cup minced fresh parsley
- 1/2 cup ricotta cheese
- 1 1/2 cups mozzarella cheese, divided
- Preheat oven to 375°F. Grease a 9×5-inch loaf pan.
- In a large bowl, beat the egg until blended. Add bread crumbs, onion, celery, Parmesan cheese, garlic powder, salt, pepper, and paprika; mix well. Add ground beef and parsley; mix until combined.
- Press 3/4 of the mixture into the bottom of the prepared pan.
- Combine ricotta cheese and 1 cup of the mozzarella cheese; spread over the beef mixture.
- Spoon remaining beef mixture over the top, patting to cover cheese. Sprinkle with remaining 1/2 cup mozzarella cheese.
- Bake for 45 minutes or until a meat thermometer registers 160°F.
- Let stand for 10 minutes before serving.
