Spinach Artichoke Chicken Breasts

Ingredients:

  • 4 boneless chicken breasts, about 4 ounces each
  • Salt and black pepper
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup white wine or chicken broth
  • 1/2 teaspoon oregano
  • 1 (14 ounce) can artichoke hearts, drained and quartered
  • 2 cups fresh spinach leaves
  • 1/2 cup grated Parmesan cheese

Method:

Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until tender, about 5 minutes. Add the garlic and cook another minute. Push the onion and garlic to the sides of the pan, and place the chicken breasts in the center of the pan.

Turn the heat up to medium-high, and cook the chicken for 6-7 minutes per side, or until it is cooked through. Add the wine or chicken broth, oregano, and artichoke hearts and bring to a simmer. Add the spinach and allow to cook for a minute or two, until wilted. Sprinkle with the Parmesan cheese.

Serve the chicken with the spinach and artichoke sauce spooned over the top, and garnish with additional Parmesan cheese if desired.
