Spanish Pisto Manchego
Pisto Manchego is a simple and delicious Spanish staple dish. It’s a hearty medley of tomatoes, peppers, onions, and cheese that is sure to please anyone’s palate. Ingredients
– 4 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 red pepper, diced
– 2 ripe tomatoes, peeled and chopped
– Fresh parsley, chopped
– 2 tablespoons tomato paste
– Salt and pepper, to taste
– 2 cups Manchego cheese, grated
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion, garlic, and pepper, and sauté until the onion is softened, about 10 minutes.
3. Add the tomatoes, parsley, tomato paste, salt and pepper, and simmer until the tomatoes are softened, about 5 minutes.
4. Transfer the mixture to an oven-proof dish and top with the grated Manchego cheese.
5. Bake at 375 degrees F for 15 minutes.
6. Serve hot with crusty bread. Enjoy!
