Spanish Fabada Recipe

Fabada is a heartwarming Spanish Bean Stew made with white beans, pork, and vegetables. It is the ultimate comfort food that’s perfect for any season or occasion. This classic, delicious, and easy-to-make stew will quickly become a weeknight staple in your house.

Ingredients:

-1 pound of dried white beans
-1/2 pound of chorizo or bacon
-2 onions, chopped
-2 cloves of garlic, minced
-1 smoked ham hock
-2 potatoes, diced
-1 cup of diced chorizo
-1 tablespoon of smoked paprika
-2 bay leaves
-3 tablespoons of olive oil
-1/2 cup of chopped parsley
-Salt and pepper to taste

Instructions:

1.Sort through the dried beans and discard any stones or debris. Rinse the beans until they are clean.

2.In a large pot, heat the olive oil over medium heat. Add the bacon or chorizo and cook until lightly golden. Add the onions and garlic and cook for two minutes.

3.Add the beans, ham hock, potatoes, chorizo, paprika, and bay leaves. Cover with cold water. Bring to a boil and lower to a simmer. Cover the pot and simmer for about 2 hours, or until the beans are tender.

4.Add salt and pepper to taste and stir in the chopped parsley. Serve hot with a side of crusty bread. Enjoy!
