Spanish Crema Catalana Recipe


  • 2 large eggs
  • 2 cups of whole milk
  • 1/2 cup sugar, plus extra for the top
  • 1 teaspoon of cornstarch
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of butter, softened
  • 1 teaspoon of vanilla extract
  • 1 cinnamon stick


  1. In a medium bowl, whisk together the eggs, milk, sugar, cornstarch, and lemon juice until thoroughly combined.
  2. In a medium saucepan over medium heat, add the egg mixture and the butter. Cook, stirring constantly, for about 10 minutes or until the mixture is thick enough to coat the back of a spoon.
  3. Stir in the vanilla extract and cinnamon stick, and cook for another 2 minutes.
  4. Remove from heat and let cool for 15 minutes.
  5. Pour crema catalana into serving dishes and sprinkle some sugar on top.
  6. Brulee the tops of your dishes with a kitchen torch.
  7. Let cool and enjoy!
