Spanish Caracoles Recipe

  • 2 dozen live snails
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 1 large tomato, diced
  • 1/2 cup white wine
  • 1 tablespoon olive oil

  • salt and pepper to taste


  1. Wash the snails and place them in a pot with cold water.
  2. Bring the water to a boil and cook the snails for 10 minutes.

  4. Heat the olive oil in a large saucepan. Add the onion and garlic and cook for 2 minutes, stirring often.
  5. Add the tomato and cook for an additional 2 minutes.
  6. Add the wine and bring to a low simmer.
  7. Add the snails to the saucepan, cover and cook for 5 minutes.
  8. Uncover and season with paprika, salt, and pepper.
  9. Continue cooking until the snails are cooked through, about 10 minutes.
  10. Serve hot, with a side of fresh bread and a glass of white wine!
