Spanish Caracoles Recipe

Ingredients:
- 2 dozen live snails
- 1/2 onion, diced
- 2 cloves of garlic, minced
- 1 large tomato, diced
- 1/2 cup white wine

- salt and pepper to taste
Instructions:
- Wash the snails and place them in a pot with cold water.
- Bring the water to a boil and cook the snails for 10 minutes.

- Add the tomato and cook for an additional 2 minutes.
- Add the wine and bring to a low simmer.

- Uncover and season with paprika, salt, and pepper.
- Continue cooking until the snails are cooked through, about 10 minutes.
- Serve hot, with a side of fresh bread and a glass of white wine!
