Bring On the Heat with Sizzling Rice Soup

For this recipe, we’ll need: 1 cup of jasmine rice, 2 tablespoons of vegetable oil, 2 cloves of garlic, 1 teaspoon of ginger, 2 cups of chicken stock, 1/2 cup of carrots, 1/2 cup of mushrooms, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1/4 teaspoon of white pepper and 1/4 cup of wood ear mushrooms.
Let’s begin by prepping the ingredients. Chop the garlic, ginger and carrots. Slice the mushrooms and wood ear mushrooms.
In a large pot, heat the vegetable oil. Add the garlic and ginger. Cook until fragrant and then add the sliced mushrooms. Stir-fry for 1-2 minutes.
Add the chicken stock, jasmine rice, carrots, soy sauce and sesame oil. Bring to a boil, reduce the heat to low, cover and simmer for 12 minutes.
Remove from heat and stir in the wood ear mushrooms. Finally, season with white pepper.
