Santiago’s Green Chile

Ingredients:
-3 bell peppers, diced
-1 onion, diced
-1 pound tomatillos, roasted
-2 tablespoons olive oil
-1 tablespoon ground cumin
-1 teaspoon paprika
-1 teaspoon garlic powder
-1/2 teaspoon oregano
-1/2 teaspoon black pepper
-1/2 teaspoon sea salt
-2 tablespoons lime juice
-1-14.5oz can of diced mild green chiles
-1-14oz can of diced smoky green chiles
-Optional: sour cream, shredded cheese, and diced avocado for topping
Instructions:
1. Preheat oven to 350°F.
2. Place the diced bell peppers and onions on a baking sheet. Drizzle with olive oil. Sprinkle with cumin, paprika, garlic powder, oregano and black pepper. Roast in oven for 25 minutes or until vegetables are tender.
3. In a large pot over medium-high heat, add roasted vegetables, tomatillos, diced mild green chiles, diced smoky green chiles, lime juice, and sea salt. Stir until all ingredients are combined.
4. Reduce heat to low and simmer for 15 minutes or until the flavors meld together.
5. Serve with a dollop of sour cream, shredded cheese, and diced avocado (optional). Enjoy!
