Recipe: Rendang Chicken


• 4 chicken thighs, cut into bite-sized pieces
• 3 tablespoons vegetable oil
• 2 large onions, finely chopped
• 4 cloves garlic, minced
• 2 tablespoons fresh ginger, grated
• 2 fresh red chillies, finely chopped
• 1 teaspoon ground coriander
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1 tablespoon ground galangal
• 2 teaspoons kaffir lime leaves, finely chopped
• 1 cup coconut milk
• 2 teaspoons brown sugar
• 2 teaspoons tamarind paste
• Salt and pepper, to taste


1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 5 minutes, stirring occasionally.

2. Add the onions, garlic, ginger, and chili, and cook for 5 more minutes.

3. Add the coriander, turmeric, cumin, and galangal, and sauté for 3 minutes.

4. Add the kaffir lime leaves, coconut milk, sugar, and tamarind paste.

5. Reduce the heat to low and simmer for 40 minutes, stirring occasionally.

6. Add salt and pepper to taste.

7. Serve warm and enjoy!
