- 800g Boneless skinless chicken thighs, fully thawed, halved
- 1 Onion, sliced
- 1 Red capsicum, cut into strips
- 200g Mushrooms, halved
- 3 cloves Garlic, crushed
- 400g can Diced tomatoes
- 2 tbsp Tomato paste
- ¼ cup (60ml) Chicken stock
- 1 tsp Dried oregano
- Salt and pepper, to taste
- Pasta or crusty bread, to serve

Method
Put the onion, capsicum, mushrooms and garlic in the slow cooker and place the chicken on top.
Mix the tomatoes, tomato paste, stock and oregano with a pinch of salt and pepper and pour over. Use only this much liquid, as the vegetables release more as they cook.
Cover and cook on low for 4–5 hours or on high for 2½–3 hours, until the chicken is very tender and cooked through. Check the thickest piece is white with no pink (75°C on a thermometer).
Break the chicken into chunks in the sauce and taste. If the sauce is thin, leave the lid off on high for 15–20 minutes.
Serve over pasta or with crusty bread.
Storage
Cool within 2 hours; don't leave it sitting in the slow cooker to cool. Keeps in the fridge up to 2 days; reheat until piping hot all the way through. Freezes up to 3 months.
