- 750g Beef mince
- 1 Onion, finely chopped
- 2 cloves Garlic, finely chopped
- 1 Egg
- 3/4 cup (about 60g) Dried breadcrumbs
- 1/2 cup (125ml) Milk
- 2 tbsp Worcestershire sauce
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/2 cup (125ml) Tomato sauce, divided
- 1 tbsp Brown sugar
You’ll need: Large bowl, 22 x 12cm loaf tin (or baking tray)
Method
Heat the oven to 180°C (160°C fan). Line a 22 x 12cm loaf tin with baking paper, or shape the loaf on a lined tray.
In a large bowl, stir the breadcrumbs and milk together and leave for 5 minutes to soak.
Add the mince, onion, garlic, egg, Worcestershire sauce, salt, pepper and 1/4 cup of the tomato sauce. Mix with your hands until just combined; overmixing makes the meatloaf dense.
Press the mixture into the tin (or shape into a loaf on the tray). Stir the remaining 1/4 cup tomato sauce with the brown sugar and spread it over the top.
Bake for 50–55 minutes, until the centre is cooked through with no pink inside (71°C on a thermometer) and the glaze is sticky.
Rest in the tin for 10 minutes, pour off any fat, then slice and serve.
Storage
Leftovers keep in the fridge up to 3 days; great cold in sandwiches. Freeze slices up to 3 months. Reheat until piping hot all the way through.
