Easy Chilli Con Carne

- 500g Beef mince
- 1 tbsp Olive oil
- 1 Onion, finely chopped
- 1 Red capsicum, diced
- 3 cloves Garlic, finely chopped
- 2 tsp Chilli powder, adjust to taste
- 2 tsp Ground cumin
- 2 tbsp Tomato paste
- 400g can Diced tomatoes
- 400g can Kidney beans, drained and rinsed
- 200ml Beef stock
- 300g Long-grain rice, to serve

Method
Heat the oil in a large saucepan over medium heat. Cook the onion and capsicum for 5 minutes, adding the garlic for the last minute.
Add the mince, turn up the heat and cook for 6–8 minutes, breaking it up, until browned with no pink left. Stir in the chilli powder, cumin and tomato paste for 1 minute.
Add the tomatoes, beans and stock. Bring to the boil, then simmer gently for 25 minutes, stirring now and then, until thick. Season to taste.
Meanwhile, cook the rice according to the packet instructions. Serve the chilli over the rice.
Storage
Cool and refrigerate within 2 hours. Keeps up to 2 days, or freeze up to 3 months. Reheat until piping hot all the way through.
