– 2 tablespoons fresh oregano leaves
– 2 tablespoons fresh basil leaves
– 2 bay leaves
– 1 teaspoon sea salt
– ½ teaspoon black pepper
– 2 tablespoons freshly squeezed lemon juice


1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
3. Stir in the smoked paprika and cook for 1 minute.
4. Add the carrots, potatoes, corn, green beans, and zucchini to the pot.
5. Pour in the vegetable broth and crushed tomatoes and bring to a boil.
6. Reduce the heat to low and add the tomato paste, agave syrup, oregano, basil, bay leaves, salt, and pepper. Simmer for 10 minutes.
7. Increase the heat to medium and cook until the vegetables are tender, about 15 minutes.
8. Remove the bay leaves and stir in the lemon juice.
9. Serve the soup hot.
