Recipe: Pochero Pork
• 3 lbs. pork shoulder, cut into cubes
• 1 onion, diced
• 2 cloves of garlic, minced
• 2 teaspoons of bay leaves
• 1 potato, cubed
• 1 cup of long beans, cut into 2-inch pieces
• 2 tablespoons of tomato paste
• 1/2 cup of chorizo sausage, sliced
• 2 tablespoons of olive oil
• Salt and pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic and bay leaves and cook until the onion is soft and translucent.
3. Add the pork and cook, stirring occasionally, until the pork is browned.
4. Add the tomato paste and chorizo and stir to combine.
5. Add the potato and long beans and season with salt and pepper.
6. Cover and simmer for 45 minutes, stirring occasionally, until the pork is tender.
7. Serve over steamed jasmine rice. Enjoy!
