Ingredients

– 4 boneless, skinless chicken breasts
– 1 cup strawberries, hulled and cut into halves
– 1/2 cup cherries, pitted and cut into halves
– 2 tablespoons olive oil
– 2 tablespoons white wine vinegar
– 2 tablespoons honey
– 1 teaspoon salt
– 1/4 teaspoon freshly ground black pepper

Instructions

1. In a medium bowl, combine the strawberries, cherries, olive oil, vinegar, honey, salt and pepper. Stir together until all is combined.

2. Place the chicken breasts in a shallow dish and pour the marinade over them. Use your hands to make sure the chicken is evenly covered with the marinade. Cover with plastic wrap and place in the fridge to marinate for at least 2 hours.

3. Once the chicken has finished marinating, heat a large skillet over medium-high heat. Add 1 tablespoon of oil to the skillet, and when the oil is hot, add the chicken.

4. Cook the chicken on each side for 4-5 minutes, or until they are cooked through.
