Tantalizingly Sweet Pineapple Mango Chicken

  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, pounded to 1/2-inch thickness


  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine pineapple, mango, garlic, chili powder, salt, pepper, orange juice, and olive oil. Mix until the ingredients are evenly combined.
  3. Arrange chicken breasts on the baking sheet. Spread the pineapple mango mixture onto the chicken breasts, leaving about 1/4 cup for later.
  4. Bake for 30 minutes, or until the chicken is cooked through. During the last few minutes of cooking, spread the remaining pineapple mango mixture onto the chicken.
