P.F. Chang’s Orange Chicken

Ingredients:

– 2 pounds boneless, skinless chicken breasts or thighs
– 1/2 cup all-purpose flour
– 3 tablespoons cornstarch
– 2 teaspoons baking powder
– 2 teaspoons salt
– 2 teaspoons garlic powder
– 1 teaspoon ground ginger
– 1 teaspoon onion powder
– 1/4 teaspoon black pepper
– Vegetable oil for frying

For the Sauce:

– 1/2 cup orange juice
– 2 tablespoons soy sauce
– 2 tablespoons rice vinegar
– 2 tablespoons honey
– 1 tablespoon fresh grated ginger
– 2 cloves garlic, minced
– 1 teaspoon sesame oil
– 2 tablespoons cornstarch

Instructions:

1. Cut the chicken into 1-inch cubes and place in a medium bowl.

2. In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, garlic powder, ground ginger, onion powder, and black pepper.

3. Pour the flour mixture over the chicken and stir until the chicken is evenly coated.

4. Heat vegetable oil in a large skillet over medium-high heat.

5. Working in batches, add the chicken to the skillet and cook until golden brown and cooked through, about 5 minutes.

6. Remove the chicken from the skillet and set aside on a plate lined with paper towels.

7. To make the sauce, in a medium saucepan, whisk together the orange juice, soy sauce, rice vinegar, honey, fresh ginger, minced garlic, and sesame oil.

8. Bring the mixture to a simmer over medium-high heat and cook for 5 minutes.

9. In a small bowl, whisk together the cornstarch and 1 tablespoon of water.

10. Pour the cornstarch mixture into the orange sauce and cook until the mixture thickens, about 5 minutes.

11. Add the cooked chicken to the sauce and stir to combine. Serve over hot rice.
