-2 teaspoons of salt
-2 eggs
-2 cups of all-purpose flour
-1/2 cup of candied citron, divided
-1/2 cup of golden raisins
-1/4 cup of brandy

Method:

1. In a small bowl, whisk the yeast with milk until combined. Allow it to sit for 10 minutes, or until proofed and foamy.

2. In a separate bowl, cream together the butter, sugar and salt. Then add the eggs, one at a time, and mix them in.

3. Add the milk and yeast mixture, followed by the flour, to the creamed mixture. Mix until combined.

4. Add the brandy, as well as half of the candied citrus and all of the raisins. Stir to combine.

5. Grease your bread machine. Place the dough in the machine and select the dough cycle option.

6. Once the dough has finished the dough cycle, remove the dough from the machine and place it on a lightly floured surface.

7. Divide the dough into two pieces and shape each into a ball. Place each one in its own greased bowl. Cover the dough pieces and allow them to rise for an hour, or until doubled in size.

8. Lightly grease your panettone springforms. Carefully shape each piece of dough and place it in the forms. Press the remaining candied citrus pieces into the top.

9. Place the forms in the oven and bake for 40 minutes, until the edges of the panettone are golden brown and the internal temperature is 190 degrees.

10. Remove from the oven and allow the panettone to cool completely. Serve with a cup of hot cocoa, cappuccino, or a scoop of vanilla ice cream for the ultimate holiday treat!
