Mexican Tamal de Elote Recipe
Tamal de Elote is a traditional Mexican recipe that is simple to make and full of flavor. It’s a sweet tamal filled with fresh sweetcorn. This recipe is perfect for a summer lunch or snack.
Ingredients:
– 4 cobs sweetcorn
– 2 cups masa harina
– ½ cup vegetable oil
– 2 tsp baking powder
– 1 tsp salt
– 1 ½ cup vegetable stock
Instructions:
1. Start by removing the husks and silks from the corn. Discard them.
2. Break the corn off the cobs and put in a blender or food processor. Blend until you get a thick puree.
3. In a large mixing bowl, combine the masa harina, baking powder, salt, and oil.
4. Slowly add the corn puree and the vegetable stock to the mixture while stirring. Mix until a dough forms.
5. Grease a steaming pot or double boiler and add 2 cups of water. Bring the water to a boil.
6. In the meantime, wet a cheesecloth or tamale wrapper. Place ¾ cup of the dough on the wrapper, spread evenly and fold over the edges.
7. Place the tamale on the side of the steaming pot or double boiler. Cover with a lid and steam for 25 minutes or until cooked through.
8. Serve with your favorite toppings such as crema, cream cheese, and cotija cheese. Enjoy!
