Mexican Rice and Chicken

- 1 pound boneless chicken breast, cut into 1 inch pieces
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ¼ teaspoon salt
- ¼ teaspoon chili flakes (optional)
Instructions
For the Rice:
- In a large pot or skillet, heat the olive oil over medium heat. Add the white rice, garlic, and onion to the pot. Sauté for 3-4 minutes or until the onions start to become translucent.
- Add the cumin, chicken broth, tomato paste, salt, and pepper to the pot. Stir to combine and bring the mixture to a boil. Once boiling, reduce heat to low, cover the pot, and cook for 15 minutes.
- Once cooked, remove the pot from the heat and let the rice sit for 5 minutes. Fluff the risotto with a fork and serve.
For the Chicken:
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and season with chili powder, cumin, salt, and chili flakes (optional). Sauté for 8-10 minutes until the chicken is cooked through and is golden brown on the edges.
- Serve the chicken with the cooked Mexican rice.
