Mexican Jalapeño Poppers Recipe

These Mexican Jalapeño Poppers are a delicious rendidtion of the classic jalapeño poppers. A mixture of jalapeños and chorizo stuffed with spicy Cotija cheese and topped with a creamy avocado sauce. Perfect for game-day snacks or a delicious appetizer at your next party!

Ingredients:

-10-12 jalapeños, halved lengthwise and membranes and seeds removed
– 1 lb. chorizo
– 2 cups coarsely crumbled Cotija cheese
– 2 avocados
– 4 tablespoons Greek yogurt
– 1 clove garlic, minced
– 1 tablespoon lime juice
– 2 tablespoons fresh cilantro, chopped
– Salt and pepper, to taste

Instructions:

1. Preheat oven to 400°F.

2. In a skillet, cook chorizo over medium heat until browned and fully cooked.

3. In a medium bowl, mash the avocados and Greek yogurt together until smooth. Then stir in garlic, lime juice, cilantro, and salt and pepper to taste.

4. In a separate bowl, combine the crumbled Cotija cheese and chorizo.

5. Spoon the cheese and chorizo mixture into the jalapeños halves, pressing down to fill the jalapeños.

6. Place the filled jalapeños on a baking sheet and bake for 20 minutes, or until the cheese is melted and the jalapeños are softened.

7. Drizzle the top of the jalapeños with the avocado sauce before serving. Enjoy!
