Mexican Chili Con Carne

Chili con carne is a hearty and flavorful Mexican-style dish that is ideal for any weeknight dinner. Ingredients

  • 2 Tablespoons vegetable oil
  • 1 medium onion, diced
  • 1 pound lean ground beef
  • 1 teaspoon minced garlic
  • 1 can (14-1/2 ounces) diced tomatoes
  • 1 can (15 ounces) red kidney beans, rinsed and drained
  • 1 can (10 ounces) mild enchilada sauce
  • 1 Tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Instructions

1. Heat oil in a large saucepan over medium heat. Add onion, and cook until softened, about 5 minutes. Add ground beef, and cook until no longer pink, about 5-7 minutes. Add garlic and cook for one minute.

2. Add tomatoes, kidney beans, enchilada sauce, chili powder, cumin, cayenne, and salt. Bring to a boil; reduce heat to low, and simmer uncovered for 20 minutes, stirring occasionally.

3. Serve with your favorite toppings, such as grated cheese, diced onions, and sour cream. Enjoy!
