Mediterranean Shakriya
Shakriya is a traditional Mediterranean dish made with lentils, tomatoes, and garlic. It is a great vegetarian option that is packed with protein and high in fiber and flavor. This dish is easy to make, and packs just the right amount of heat and tanginess. The combination of hearty lentils and aromatic flavorings make this an irresistible meal.
Ingredients:
– 1 cup dried red lentils
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 large onion, chopped
– 1 large tomato, chopped
– 1 teaspoon paprika
– 1 teaspoon cumin
– ½ teaspoon turmeric
– ½ teaspoon cayenne pepper
– ½ teaspoon ground black pepper
– Salt, to taste
– 1 teaspoon lemon juice
Instructions:
1. Rinse the lentils in a fine mesh strainer until the water runs clear.
2. In a large pot, heat the oil over medium heat and then add the onion and garlic. Cook until the onion begins to soften and become translucent.
3. Add the tomato, paprika, cumin, turmeric, cayenne pepper, and black pepper. Cook for an additional 2 minutes.
4. Add the lentils and cover with cold water until it is about 2 inches over the top of the lentils.
5. Bring the lentils to a boil, cover, and reduce to a simmer for about 20 minutes or until the lentils are soft.
6. Add salt, to taste, and lemon juice before serving. Serve the shakriya with your favorite sides or use as a starter for a heartier meal. Enjoy!
