Mediterranean Quinoa Salad

Adding quinoa to a salad is an amazing way to get a ton of great nutrition! This Mediterranean quinoa salad includes a variety of flavors and textures, and is sure to please!


  • 1 cup of quinoa (after cooking, this will be about 2-3 cups cooked quinoa)
  • 1/2 cup of sliced cherry tomatoes
  • 1/2 cup of diced cucumber
  • 1/4 cup of chopped red onion
  • 1/2 cup of crumbled feta cheese
  • 2 tablespoons of chopped kalamata olives
  • 1/4 cup of chopped fresh parsley
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 tsp of garlic powder
  • 1/2 tsp of dried oregano
  • Salt and pepper, to taste


  1. Cook quinoa according to instructions, let cool before adding to salad
  2. In a large bowl, add the cooled quinoa, tomatoes, cucumber, onion, feta cheese, olives, and parsley
  3. In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper
  4. Pour the dressing over the quinoa mixture, and toss to combine
  5. Serve chilled or at room temperature
