Mediterranean Quinoa Salad
Adding quinoa to a salad is an amazing way to get a ton of great nutrition! This Mediterranean quinoa salad includes a variety of flavors and textures, and is sure to please!
Ingredients:
- 1 cup of quinoa (after cooking, this will be about 2-3 cups cooked quinoa)
- 1/2 cup of sliced cherry tomatoes
- 1/2 cup of diced cucumber
- 1/4 cup of chopped red onion
- 1/2 cup of crumbled feta cheese
- 2 tablespoons of chopped kalamata olives
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 tsp of garlic powder
- 1/2 tsp of dried oregano
- Salt and pepper, to taste
Instructions:
- Cook quinoa according to instructions, let cool before adding to salad
- In a large bowl, add the cooled quinoa, tomatoes, cucumber, onion, feta cheese, olives, and parsley
- In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper
- Pour the dressing over the quinoa mixture, and toss to combine
- Serve chilled or at room temperature
