2. In a saucepan over medium heat, melt butter and add sliced mushrooms. Cook until the mushrooms are tender and lightly browned, about 8 minutes. Stir in flour and cook for 1 minute. Gradually add stock, stirring constantly until thickened. Stir in thyme and season with salt and pepper to taste.

3. When the meatloaf is done cooking, pour the mushroom gravy over the top and let simmer for 5 minutes. Sprinkle with parsley before serving.
