Ingredients

– 500g minced beef
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tin of diced tomatoes
– 2 teaspoons Italian herbs
– 4 cups assorted greens (rocket, spinach and endive)
– ¼ cup feta, crumbled
– 2 tablespoons pine nuts
– 2 tablespoons olive oil
– 2 tablespoons balsamic vinegar
– Salt and pepper, to taste

Method

1. In a large bowl, combine the beef, onion, garlic, tomatoes and Italian herbs. Season generously with salt and pepper, and mix until well combined.
2. Roll the mixture into 2-3cm balls, and place on a lined oven tray. Bake in a preheated oven of 180°C for 25 minutes or until they are golden brown.
3. Meanwhile, combine the greens, feta and pine nuts in a large salad bowl. Drizzle with the olive oil and balsamic vinegar, and mix gently to combine.
4. Slice the cooked meatballs in half, and add to the salad. Serve with a side of crusty garlic bread.
