2 tablespoons olive oil
1/3 cup finely chopped onion
½ cup finely chopped celery
3 cloves minced garlic
¼ cup chopped sun-dried tomatoes
2 tablespoons chopped fresh oregano
1 teaspoon kosher salt
generous grinding of black pepper
¼ cup drained ricotta cheese
1 cup bread crumbs
1 pound ground beef
2 ounces pancetta or bacon, coarsely chopped
3 ounces Parmigiano Reggiano, finely grated
1 large egg
Preheat the oven to 350° F.
In a large sauté pan, heat the oil over medium-high heat. When hot, add the onion, celery, and garlic and sauté until the onion is translucent, about 5 minutes.
Remove from the heat, add the sun-dried tomatoes and oregano, and season to taste with salt and pepper.
In a large bowl, mix together the ricotta, bread crumbs, ground beef, pancetta or bacon and Parmigiano-Reggiano. Add the egg, and then add the sautéed vegetables and mix until everything is just combined.
Transfer the mixture to a 9-by-5-inch loaf pan. Bake in the preheated oven until golden and cooked through, about 1 hour.
Let the meatloaf rest for 10 minutes before cutting and serving.
