Hearty & Delicious Lard Bread

  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground coriander
  • ¼ cup crumbled feta cheese

Method:

  • In a large bowl, mix together the flour, marrow fat (lard), and ¼ cup of cold water until a dough forms.
  • On a lightly floured surface, roll out the dough until it is very thin.
  • Spread the chopped onion and capsicum onto the thin sheet of dough. Sprinkle the oregano, cinnamon, ground cloves, and ground coriander over the onion and capsicum.
  • Place the crumbled feta cheese in the center of the dough and sprinkle a bit more oregano over it.
  • Gently roll the dough from one end to the other, forming a roulade.
  • Place the roulade seam-side down onto a lightly greased baking sheet and bake in a preheated oven at 400°F (200°C) for 25 minutes until golden brown.
  • Cut into slices and serve warm.
