Nothing beats a crispy yet fluffy slice of home-baked bread. But what about lard bread? For an extra dose of deliciousness and nourishment, nothing can beat this traditional Georgian dish! Lard bread – also known as Ketskhoveli – is an ancient Georgian recipe made from lard and flour, oregano, and a special blend of spices.

Rich and flavorful, this comforting dish draws its unique flavor profile from a delicious combination of oregano and spices like cinnamon, cloves, and coriander. The process begins with preparing a basic dough made of lard and flour, that is then rolled out into a thin sheet and filled with generous amounts of freshly-chopped oregano, the aforementioned spices, and some chopped onion, diced capsicum, and crumbled feta cheese.

  • 1⅔ cups all-purpose flour
  • 2 tablespoons marrow fat (lard)
  • cup chopped onion

  • ½ cup chopped capsicum (peppers)
  • 1 teaspoon oregano
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground coriander
  • ¼ cup crumbled feta cheese

  • In a large bowl, mix together the flour, marrow fat (lard), and ¼ cup of cold water until a dough forms.
  • On a lightly floured surface, roll out the dough until it is very thin.
  • Spread the chopped onion and capsicum onto the thin sheet of dough. Sprinkle the oregano, cinnamon, ground cloves, and ground coriander over the onion and capsicum.
  • Place the crumbled feta cheese in the center of the dough and sprinkle a bit more oregano over it.
  • Gently roll the dough from one end to the other, forming a roulade.
  • Place the roulade seam-side down onto a lightly greased baking sheet and bake in a preheated oven at 400°F (200°C) for 25 minutes until golden brown.
  • Cut into slices and serve warm.
