- 1⅔ cups all-purpose flour
- 2 tablespoons marrow fat (lard)
- cup chopped onion
- ½ cup chopped capsicum (peppers)
- 1 teaspoon oregano
- 1 teaspoon cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon ground coriander
- ¼ cup crumbled feta cheese
- In a large bowl, mix together the flour, marrow fat (lard), and ¼ cup of cold water until a dough forms.
- On a lightly floured surface, roll out the dough until it is very thin.
- Spread the chopped onion and capsicum onto the thin sheet of dough. Sprinkle the oregano, cinnamon, ground cloves, and ground coriander over the onion and capsicum.
- Place the crumbled feta cheese in the center of the dough and sprinkle a bit more oregano over it.
- Gently roll the dough from one end to the other, forming a roulade.
- Place the roulade seam-side down onto a lightly greased baking sheet and bake in a preheated oven at 400°F (200°C) for 25 minutes until golden brown.
- Cut into slices and serve warm.
