Korean Doenjang Jjigae: A Delicious and Nutritious Traditional Stew

Ingredients:

-1 tablespoon of doenjang (fermented soybean paste)
-2 cloves of garlic, minced
-1 tablespoon of gochujang (Red chili pepper paste)
-2-3 tablespoons of sesame oil
-2 cups of water
-1 zucchini, diced
-1 onion, diced
-2-3 shiitake mushrooms, sliced
-1 potato, diced
-1 carrot, diced
-1 spring onion, chopped
-1/2 cup of firm tofu, cubed
-2 tablespoons of fish sauce
-Salt and pepper, to taste

Instructions:

1. In a saucepan, combine doenjang, garlic, gochujang, sesame oil and 2 cups of water and bring it to a boil.

2. Once boiling, add in the zucchini, onion, mushrooms, potato, carrot, spring onion and tofu. Simmer for 8-10 minutes.

3. Add in the fish sauce, salt and pepper. Simmer for 3-4 minutes.

4. Serve hot with steamed rice or a warm bowl of noodles. Enjoy!
