Jerk Chicken Wraps – the perfect Caribbean meal

The Caribbean islands might be far away, but you can bring the sunshine, flavours and fragrances of the tropics right to your dinner table. What better way to do that than with a delicious dish of Jerk Chicken Wraps? A zesty combination of spices, a hint of citrus and succulent charred chicken, these wraps bring the Caribbean right to your kitchen.

The marinade is marvellously perplexing with the contrasting scents of thyme, allspice, Scotch bonnet peppers and soy sauce set to tantalize your taste buds. Ingredients:

– 1 ½ lbs chicken thigh, boneless and skinless
– 1 small onion, finely chopped
– 4 cloves garlic, minced
– 2 tsp thyme
– 2 tsp allspice
– ¼ tsp nutmeg
– ¼ cup soy sauce
– 2-3 scotch bonnet pepper, stems removed and minced
– 1/4 cup lemon juice
– 1/4 cup lime juice
– 2-3 tbsp vegetable oil
– Salt and Pepper to taste
– 4 wraps
– 1 avocado, diced
– 2 large tomatoes, diced

Method:

1. In a large bowl or Ziplock bag, mix together the chopped onion, garlic, Thyme, Allspice, nutmeg, soy sauce, Scotch bonnet pepper, lemon juice and lime juice.

2. Add the chicken to the marinade and ensure that it is well coated.

3. Cover the bowl or seal the bag and refrigerate the marinade for at least an hour to allow the chicken to absorb the spices and flavours.

4. Preheat the oven to 350ºF. Grease a baking dish with vegetable oil and place the marinated chicken in a single layer. Bake uncovered for 25-30 minutes or until the chicken is cooked through and charred.

5. Heat the wraps in a cast iron pot, lightly greased with the vegetable oil.

6. Take the cooked chicken out of the oven and evenly divide onto each wrap.

7. Top with the diced avocado and tomato and serve.
