-1 pound boneless, skinless chicken breast, cut into cubes
-2 cups dry penne pasta
-Salt, to taste


1. Heat oil in a large skillet over medium heat.
Add onions and garlic and sauté until softened, about 3 minutes.
2. Add bell peppers, allspice, ground ginger, cayenne pepper, ground cinnamon, black pepper, tomato paste, chicken stock, orange juice, sugar, apple cider vinegar, brown sugar and jerk seasoning.
Simmer for 10 minutes until peppers are tender and sauce has thickened.
3. Add chicken cubes and cook for an additional 10 minutes.
4. Meanwhile, cook the penne pasta to al dente according to the package instructions.
5. Drain the cooked pasta and add it to the skillet with the jerk chicken.
6. Toss everything together for about 2 minutes over low heat.
7. Taste and adjust seasonings, if needed.
