Say Hello to Japanese Chawanmushi!

Chawanmushi is a traditional Japanese egg custard dish served in small bowls. It is steamed and often served as part of a Japanese meal, although it can be served as an appetiser. It is commonly flavored with dashi and soy sauce, and typically contains ingredients such as mushrooms, ginkgo nuts, and shrimp. Japanese Chawanmushi Recipe


-3 large eggs
-½ cup dashi
-1 teaspoon soy sauce
-1 teaspoon mirin
-½ teaspoon salt
-30 grams shiitake mushrooms, sliced
-1 piece cooked ginkgo nuts
-10 small shrimp, peeled and deveined


1. Whisk together the eggs, dashi, soy sauce, mirin, and salt in a bowl until smooth.

2. Divide the mushrooms, ginkgo nuts, and shrimp evenly into four small cups or ramekins.

3. Carefully pour the egg mixture into each cup, leaving some room at the top.

4. Place the cups in a steamer over boiling water. Steam for about 10 minutes or until the surface of the custard is set.

5. Serve the chawanmushi warm or at room temperature. Enjoy!
