Irish Nachos
Irish Nachos are a delicious dish popular on the Emerald Isle. They combine the crunchy deliciousness of chips with the warm and cheesy goodness of nachos to create a crowd pleasing snack or meal. Topped with melted cheese, bacon, and optional sour cream, these nachos are an easy way to get your nacho fix at home.
Ingredients
- 3 to 4 potatoes, cut into wedges
- ¼ cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon sea salt
- 2 cups shredded cheese (cheddar or monterey jack work great)
- 2 to 3 cooked bacon slices, crumbled
- 1 green onion, thinly sliced
- Optional: sour cream, for serving
Instructions
- Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the potato wedges, olive oil, garlic powder, smoked paprika, oregano, and salt. Mix until all potato wedges are fully coated.
- Spread potatoes on prepared baking sheet and bake for 25-30 minutes, flipping them halfway through baking time.
- Remove from oven and top with cheese and crumbled bacon. Place back in the oven for another 5-6 minutes, until the cheese has melted.
- Take Irish Nachos out of the oven and garnish with green onions. Serve with optional sour cream and enjoy.
