Irish Nachos

Irish Nachos are a delicious dish popular on the Emerald Isle. They combine the crunchy deliciousness of chips with the warm and cheesy goodness of nachos to create a crowd pleasing snack or meal. Topped with melted cheese, bacon, and optional sour cream, these nachos are an easy way to get your nacho fix at home.

Ingredients

  • 3 to 4 potatoes, cut into wedges
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • 2 cups shredded cheese (cheddar or monterey jack work great)
  • 2 to 3 cooked bacon slices, crumbled
  • 1 green onion, thinly sliced
  • Optional: sour cream, for serving

Instructions

  1. Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the potato wedges, olive oil, garlic powder, smoked paprika, oregano, and salt. Mix until all potato wedges are fully coated.
  3. Spread potatoes on prepared baking sheet and bake for 25-30 minutes, flipping them halfway through baking time.
  4. Remove from oven and top with cheese and crumbled bacon. Place back in the oven for another 5-6 minutes, until the cheese has melted.
  5. Take Irish Nachos out of the oven and garnish with green onions. Serve with optional sour cream and enjoy.
