Indian Rogan Josh Recipe

Rogan josh is a classic Indian dish that originates in the North Indian state of Kashmir. The traditional dish is made with a combination of lamb, garam masala, yogurt, paprika, fennel and other spices. Rogan josh is best served with basmati rice, naan or chapatis. Ingredients

  • 2 pounds of lamb, diced
  • 1 teaspoon of fennel
  • 3 tablespoons of Kashmiri red chile powder
  • 2 tablespoons of coriander powder
  • 3 tablespoons of yogurt
  • 1 teaspoon of turmeric powder
  • 2 tablespoons of garam masala
  • 5 cloves of garlic, crushed or chopped
  • 1 tablespoon of fresh ginger, minced
  • 2 tablespoons of vegetable oil
  • 1 large onion, chopped
  • 1 cup of canned tomato sauce
  • Salt and black pepper, to taste

Instructions

  • In a medium bowl, combine the fennel, red chile powder, coriander powder, 2 tablespoons of yogurt, turmeric powder, and 1 tablespoon of the garam masala. Stir the spices together into a paste.
  • Add the lamb to the paste and mix together until all of the meat is coated. Set aside for 10 minutes.
  • Heat the oil in a large skillet over medium-high heat. Add the onions and cook for about 5 minutes until softened.
  • Add the garlic and ginger to the same skillet, and cook for an additional 2 minutes.
  • Add the lamb to the skillet, and cook for about 10 minutes, stirring often. Once the lamb is cooked through, add the tomato sauce.
  • Reduce the heat to low, and simmer the dish for 25 minutes, or until the sauce has thickened and the lamb has taken on a rich, red color. Stir in the remaining garlic and garam masala.
  • Season the dish with salt and black pepper, then remove from the heat. Serve hot over basmati rice, naan bread, or chapatis.
