Indian Kheer Recipe

Ingredients

• 1 cup uncooked basmati rice
• 6 cups full-fat milk
• 1/2 cup sweetened condensed milk
• 1 tablespoon ground cardamom
• 1/4 teaspoon ground saffron
• 2 tablespoons slivered almonds
• 2 tablespoons chopped pistachios
• 4 tablespoons unsalted butter
• 1/4 cup golden raisins
• 1/4 cup granulated sugar
• pinch of salt

Instructions

1. In a large pot, combine the rice and 5 cups of the milk. Bring to a boil over medium heat, stirring occasionally.

2. Reduce heat to low, and cook the rice, stirring frequently until it is nearly tender and the mixture becomes thickened, about 25-30 minutes.

3. Stir in the remaining cup of milk, sweetened condensed milk, cardamom, saffron, almonds, pistachios, butter, raisins, sugar, and a pinch of salt.

4. Continue to cook over medium-low heat, stirring frequently, until the rice is tender and creamy, about 25-30 minutes.

5. Serve warm or chilled, topped with extra nuts, dried fruit, and/or a dollop of sweetened condensed milk. Enjoy!
