Indian Chana Masala

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cayenne pepper (optional)
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions:

  1. Heat the oil in a large saucepan over medium-high heat. Add the onion and cook until it has softened, about 5 minutes.
  2. Add the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper (optional) and cook for another 30 seconds.
  3. Add the tomatoes and chickpeas and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes.
  4. Stir in the cilantro and season with salt and pepper to taste.
  5. Serve with warm naan, rice, or your favorite side dish!
