Indian Chana Masala

Ingredients:
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cayenne pepper (optional)
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
Instructions:
- Heat the oil in a large saucepan over medium-high heat. Add the onion and cook until it has softened, about 5 minutes.
- Add the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper (optional) and cook for another 30 seconds.
- Add the tomatoes and chickpeas and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes.
- Stir in the cilantro and season with salt and pepper to taste.
- Serve with warm naan, rice, or your favorite side dish!
