Indian Biryani

Ingredients:

-1 cup Basmati rice
-2 tablespoons ghee
-2 teaspoons ground cumin
-1 teaspoon ground coriander
-1 teaspoon ground black pepper
-1 teaspoon garam masala
-1 teaspoon turmeric
-1/2 teaspoon cayenne pepper
-2 tablespoons chopped fresh mint
-1 cup frozen mixed vegetables
-1/2 cup golden raisins
-2 tablespoons chopped cashews
-Salt to taste

Instructions:

1. Wash the Basmati rice and set aside.
2. In a large pan, heat the ghee over medium heat.
3. Add the cumin, coriander, black pepper, garam masala, turmeric, and cayenne pepper to the ghee and stir to combine.
4. Add the mint, frozen vegetables, raisins, cashews, and salt to the pan. Stir and cook for 2-3 minutes.
5. Add the Basmati rice to the pan and stir until the rice is fully coated with the spices.
6. Add 2 cups of water to the pan and bring to a boil.
7. Reduce the heat to low and cover the pan. Simmer for 10-15 minutes.
8. Turn off the heat and fluff the biryani with a fork.
