Unique Ingredients & Preparation

Imbolc Cake is an unusually delicious medley of ingredients. Rather than following a traditional cake recipe, Imbolc Cake boasts unique ingredients such as sunflower seeds, olive oil, and even chickpeas. Traditional cakes such as carrot cake are given new life with a twist – roasted chickpeas provide a savory flavor and hearty texture. The sunflower seeds lend crunch and a pop of nutty taste while the olive oil adds a rich sweetness. In addition, the cake is flavored with a special blend of spices such as nutmeg, anise, and cumin.

This unusual combination of ingredients is just as unique in its preparation. The cake begins with a base of chickpeas and all-purpose flour. Once the base is mixed together, the sunflower seeds, olive oil, and spices are mixed in. Finally, the mixture is poured into a cake pan and baked until golden brown and fragrant.

Once baked and cooled, Imbolc Cake has a delightful nutty and spicy scent. During the cutting and serving process, it reveals a rich golden hue. Each bite gives you a heavenly smell, and a vibrant mixture of flavors – sweet, savory, and spicy all at once. With each slice being soft and moist, the cake is sure to melt in your mouth.
