Introducing the Heavenly Rice Salad

Ingredients:

• 1 cup uncooked white rice
• 2 tablespoons olive oil
• 2 ripe mangos, diced
• 2 teaspoons chili powder
• 2 tablespoons freshly squeezed lime juice
• 1/2 cup freshly chopped peanuts
• 1/2 cup chopped fresh cilantro
• Salt to taste

Method:

1. Cook the white rice according to package instructions. Set aside to cool.
2. In a large bowl, combine cooled cooked rice with the mango, chili powder, lime juice, peanuts, and cilantro.
3. Drizzle with olive oil and add salt to taste.
4. Serve warm or cold.
