The Recipe: Hasan Chicken
– 2lbs boneless chicken thighs, cut into bite-sized pieces
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 teaspoons ground cumin
– 1/2 teaspoon cayenne pepper
– 1 teaspoon ground cardamom
– 1/2 teaspoon ground allspice
– 1/4 teaspoon ground nutmeg
– 2 bay leaves
– 2 cups diced tomatoes
– 2 tablespoons of tomato paste
– 1/2 cup chicken stock
– 1 cup carrots, diced
– 1 cup cauliflower, diced
– 2 tablespoons chopped fresh parsley
