Grilled Herb-Crusted Pork Chops are a flavorful and succulent addition to any meal. This easy-to-make dish pulls together pork chops, fresh herbs and spices, for maximum flavor. And with the added bonus of being cooked on a grill – what’s not to love?

To begin, start with high-quality center-cut pork chops, approximately 1-1/2 to 2 inches thick. Trim the fat away and season with salt; however you can also add other variations such as garlic, pepper, cumin and/or chili powder.

Once the chops are well seasoned, heat up the grill. The chops should be cooked for about 4 to 5 minutes on each side, until the pork is firm to the touch and the internal temperature reaches 160 degrees.

While the pork chops grill, begin to make the crumb crust. Use fresh herbs such as rosemary, oregano, and thyme, and place them in a blender or food processor. Pulse on high until they become a fine powder. If a finer herb blend is desired, add a teaspoon or two of garlic powder, onion powder, and/or ground coriander to the mix.

Once the chops are cooked, spread a generous amount of the herb powder on both sides of each chop. Place the chops on the grill and cook for a few minutes longer, until the crumb crust is lightly toasted.

Garnish the chops with a pat of butter, a pinch of salt and pepper, and finely chopped parsley or freshly grated lemon zest. Serve with grilled vegetables or a side salad.
