Greek Gemista Recipe

Ingredients

• 4 large tomatoes
• 4 large bell peppers
• 4 onions
• 2 cups cooked long grain white rice
• ½ cup freshly chopped dill
• ½ cup freshly chopped parsley
• ¼ cup olive oil
• 2 tablespoons tomato paste
• Salt and pepper

Instructions

1. Preheat oven to 350°F.
2. Cut off the tops of the peppers and tomatoes, then scoop out the insides. Place the prepared tomatoes and peppers in a large baking dish.
3. Peel the onions and cut them in half. Place the onions in the dish around the tomatoes and peppers.
4. Mix the cooked rice, dill, parsley, olive oil, tomato paste, salt and pepper in a bowl.
5. Stuff the tomatoes and peppers with the rice mixture.
6. Drizzle the vegetables with the remaining olive oil and sprinkle with salt and pepper.
7. Bake uncovered for one hour or until tender.
