Gramercy Tavern Mushroom Lasagna Recipe
Originally created by the iconic Chef Tom Colicchio at Gramercy Tavern, this Mushroom Lasagna is an excellent and flavorful vegetarian main dish for gatherings and special occasions. Lasagna noodles are layered with an abundant filling of mushrooms, Parmesan, and ricotta cheese and baked with a creamy béchamel sauce. It’s one of those dishes that is sure to please everyone.
Ingredients:
-2 tablespoons olive oil
-2 pounds mixed mushrooms, cleaned and coarsely chopped
-1/4 cup chopped shallots
-4 tablespoons unsalted butter
-4 tablespoons all-purpose flour
-5 cups milk
-2 tablespoons kosher salt
-2 teaspoons ground white pepper
-2 teaspoons fresh thyme
-1 teaspoon garlic, minced
-1/2 cup grated Parmesan cheese
-1 pound ricotta cheese
-1 pound lasagna noodles, cooked and cooled
-1/4 cup extra parmesan cheese
Instructions:
1. Preheat oven to 375°F.
2. Heat the oil in a large skillet over medium-high heat. Add the mushrooms and shallots and cook, stirring occasionally, until all the moisture has evaporated, about 7 minutes. Set aside.
3. In a medium saucepan, melt the butter over medium heat. Add the flour and stir to combine. Cook for 2 minutes, stirring constantly. Whisk in the milk and bring to a boil, stirring continuously. Reduce the heat and simmer for 5 minutes, stirring occasionally. Remove from the heat and stir in the salt, pepper, thyme, garlic, Parmesan cheese and ricotta cheese.
4. Spread 1/4 of the mushroom mixture in the bottom of a 13×9-inch baking dish. Top with 1/3 of the sauce, then 1 layer of lasagna noodles. Spread another 1/4 of the mushroom mixture over the noodles and top with another 1/3 of the sauce, then another layer of lasagna noodles. Repeat this layering until all the ingredients are used, ending with the last of the sauce. Sprinkle the extra Parmesan cheese over the top.
5. Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and golden brown. Let rest for 10 minutes before serving. Enjoy!
