Traditional German Pasta Salad

1 lb elbow macaroni

1 red onion, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

2 tablespoons white vinegar

1 teaspoon dried dill

3 tablespoons chopped fresh parsley

Salt and pepper to taste

Optional rinsed and drained canned chickpeas or black beans

Instructions:

1. Cook the macaroni according to the instructions on the package and drain.

2. In a large bowl, combine the macaroni, onion, bell peppers and any optional ingredients.

3. Prepare the dressing by whisking together the vinegar, olive oil, mustard, garlic powder, dill, parsley, salt and pepper in a small bowl.

4. Pour the dressing over the macaroni and mix until all ingredients are combined.

5. Cover and chill in the refrigerator for at least 1 hour.

6. Serve cold or at room temperature.
