-2 tablespoons of butter
-1/2 cup of diced onion
-2 carrots, peeled and diced
-2 celery stalks, diced
-4 potatoes, peeled and diced
-4 cups vegetable broth
-1/2 teaspoon of dried thyme
-1/4 cup of chopped parsley
-Salt and black pepper, to taste
-1/4 cup of heavy cream
1.Heat the butter in a large saucepan over medium-high heat.
2.Add the onion, carrots, and celery and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
