French Cassoulet

2 lbs of dried white beans, such as navy or cannellini
3 cups chicken or vegetable broth

2 stalks celery, chopped
1/2 lb smoked pork sausage, cut into ½-inch slices
1 lb boneless lamb, cut into 1-inch cubes

1/2 teaspoon freshly ground black pepper
2 bay leaves
1/2 teaspoon dried thyme


1. Rinse the beans and pick through to remove any stones or debris. Soak the beans overnight in a large bowl of water.
