  • 1/2 cup room temperature butter

  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 4-6 tablespoons milk or whipping cream

  1. Preheat the oven to 350 degrees F.
  2. Cream together the butter and sugar until light and fluffy. Beat in the vanilla extract and egg until well combined.
  3. In a separate bowl, whisk together the flour, toasted oats, and salt.
  4. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Roll the dough out to 1/4” thick, and cut out the cookies in the desired shapes. Place on an ungreased baking sheet and bake for 8-10 minutes, or until edges are lightly golden brown.
  6. Remove from oven and let cool completely.
  7. To make the glaze, whisk together the powdered sugar, vanilla extract, and 4 tablespoons of the milk/whipping cream. Add more milk/cream, 1 tablespoon at a time, until the desired consistency is reached.
  8. Dip the cooled cookies into the glaze and let the excess drip off. Place the cookies on a piece of parchment paper, and immediately sprinkle the pastel sprinkles over the top while the glaze is still wet.
  9. Allow the glaze to set before serving.
