  • 1 large eggplant, diced
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can of diced tomatoes
  • 2 sprigs of fresh oregano, finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • 1 cup of vegetable broth
  • ½ cup feta cheese, crumbled


  1. In a large saucepan over medium heat, add the olive oil, eggplant, onion and capsicums. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
  2. Add the garlic and oregano and cook for 1 minute.
  3. Add in the diced tomatoes and their juices, paprika, oregano, salt, pepper and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
  4. If the liquid has reduced too much, add a little bit more vegetable broth. Taste for seasoning, adding more salt and pepper if needed.
  5. Serve stew over a bed of cooked grains. Sprinkle feta cheese on top and enjoy!
