Erin French Meatloaf

Meatloaf is a classic comfort food made with ground beef, eggs, milk, and breadcrumbs, with herbs and spices added for flavor. This version from Erin French is baked in a skillet and topped with ketchup and crunchy breadcrumbs for a crispy crust. Serve it with mashed potatoes or your favorite sides for a delicious, home-cooked meal.

Ingredients

– 2 pounds ground beef
– 1 small onion, finely diced
– 1 green pepper, diced
– 2 cloves garlic, minced
– 2 eggs
– 1/2 cup milk
– 1/2 cup plain breadcrumbs
– 1 teaspoon oregano
– 1 teaspoon thyme
– 1 teaspoon parsley
– Salt and pepper, to taste
– 2 tablespoons ketchup
– 2 tablespoons breadcrumbs

Instructions

1. Preheat oven to 375 degrees Fahrenheit.
2. In a large mixing bowl, combine ground beef, onion, green pepper, garlic, eggs, milk, breadcrumbs, oregano, thyme, parsley, salt, and pepper.
3. Form mixture into a loaf and place in a greased skillet.
4. Bake for 40 minutes.
5. Remove from oven and spread ketchup over the top.
6. Sprinkle with breadcrumbs and return to the oven.
7. Bake an additional 10 minutes.
8. Slice and serve.
